White wines: most are made from Chardonnay (this grape represents 20% of the surface area planted with vines in the northern sector of the valley). Traditional vinification under temperature control.
Rosé wines: made by bleeding off juice from a vat of red. Numerous rosés here are made from Syrah or a blend of Syrah and Chardonnay. They are vinified in the same way as the white wines.
Red wines: although many red varietals - Merlot, Syrah, Grenache - are produced in the valley, the most typical reds are a blend of three grapes: Syrah (50%) plus two other varieties, such as Carignan, Merlot, Grenache, Cinsault or Pinot.
